Let sit overnight. The next day drain and rinse beans. Pick out any dark beans. Put soaked beans back into pot and fill with water up to 1-2 in. over beans. Boil 25-30 minutes, skimming any scum off the top of the liquid. Do not let beans boil dry; add hot water as water evaporates if needed. While the beans boil, take out a big roaster and mix the remainder of ingredients in the bottom. Ladle out the beans into the roaster with a slotted spoon (reserve the liquid in the pot). Stir the beans and sauce. Pour in the reserved liquid to just cover the beans. Bake at 300 F for 3-4 hours, stirring each hour, until beans are tender.
