Then I saut?ed the diced zucchini, garlic, and onion in the olive oil until tender. Then I removed the sausage from the casing and browned it, then dumped in the saut?ed zucchini, garlic and onion mixing it all together. I diced 2 tomatoes fairly small and threw them in with salt and pepper to taste. When everything is good and mixed together, I brushed the zucchini shells with olive oil and stuffed them with the vegetable and sausage mixture. I put them on a non stick pan (or you can spray it with non stick cooking spray), lightly sprinkled them with the parmesan cheese and baked them until tender. About 20-30 mins on 350 . You could also add any color bell pepper, or other type of pepper, yellow squash, celery, or whatever veggies you have on hand and feel like chopping and throwing into the mix. You could even try it with ground turkey for a much leaner protein, and then season them to taste.
