Here is how you make Baked Cornish Hen:

Mix together all ingredients except the hen to create a baste. Rub and massage the baste on the hen both on and under the skin. Pour any remaining baste inside the hen. If using fresh lemon, place the lemon rinds inside the cavity to retain moisture. You can also add a few slices of onion (to be discarded after baking) in the cavity to extra flavor and moisture. Bake at 350 for about an hour. Remove from oven and let rest for a few minutes. Cut in half and serve. Makes 2 servings.
