Here is how you make Fried Baked potatoes:

In a large pot, fill halfway with water. Set on high heat, cover.While the water is coming to a boil, prepare your ingredients. Clean the potatoes and slice into 1 inch cubes, leave the skin on. When the water is boiling add the potatoes. Let boil until tender- you can stick a fork in them easily. Now clean and chop the green pepper into either cubes or small strips, whichever you prefer. Set aside. Chop the yellow onion into small cubes. Put with the chopped green pepper. When the potatoes are done, drain them. Now take out a skillet and spray with pam or another fat-free greasing spray. Add all the potatoes and the green peppers, onions. Spray some more pam ontop of the potatoes. Add the minced garlic, pepper, and salt all to taste. Flip around the potatoes to evenly fry on all sides.
