1.5 cup shredded cheddar cheese
1 medium onion chopped semi-fine

Here is how you make Loaded smashed baked potatoes:

Fry or bake bacon until crispy. Blot grease. Set aside to cool. Scrub potatoes but leave skins intact. Cut into fourths and place in pot and boil until soft. As potatoes boil, crumble cooled bacon into small bits, set aside. Drain potatoes and place back into pot. Begin smashing potatoes, keep potatoes chunky and add the rest of the ingredients (less .5 cup cheddar cheese) and mix. Put in baking pan and bake uncovered for 25-30 minutes at 350 degrees.
