Pre heat oven to gas mark 6. Place the potatoes into pan of boiling water for 7 mins.2.Drain potatoes and place in a line onto a large roasting tin , leave a gap each side. This will act as a bed for the fish.3.Skin and quarter the tomatoes and scatter over potatoes. Chop the deseeded peppers into chunks, and place either side of potatoes, sprinkle the oregano, garlic , 2 tbsp of olive oil and chillies over mix. Bake for 40mins turning dish half way through the cooking period.4.slash the fish a couple of times, rub the skin with olive oil and season with salt and pepper. Place the fish on top of the potatoes.5.Return dish to oven for a further 15 mins, turning again half way through cooking period until fish is cooked through.
