Preheat oven to 425F.Chop the potatoes, put in a pan, cover with water and bring to a boil. Boil approx 10 minutes or until soft. Remove from heat and drain.Get a large deep oven-safe skillet, pour in oil, heat to mediumAdd onion and carrot, cook, stirring occasionally, until carrots are soft and onions are translucent and just starting to brown.
