Add undrained tomatoes, capsicum, the water, beans and lentils. Bring to the boil, reduce heat and simmer uncovered for about 20 mins thickens (moisture reduces). Remove from heat and stir in mint and add plenty of ground black pepper. Serve sprinkled with parsley.
