1 1/4C Diced tomatoes, no salt added, with juice
1/2 tsp Light Brown sugar
Dash of pepper, to taste
3/4C Frozen baby lima beans, partially thawed

This recipe makes two servings. 1 Serving = 1 chop & 1 Cup of vegetable mixture.1. In large non stick skillet, coated with cooking spray, brown the pork chops for 5 mins on each side. Place the chops on a platter and set aside.2. Saut? the onion in the skillet until tender but not brown, about 5 mins. Add carrot & garlic and saut? for about 3 more mins. Add he tomatoes, sugar and pepper. Return the pork chops to the skillet.3. Bring to a boil, then reduce heat to low, cover & simmer for 20 mins. Stir in the lima beans pushing them down into the liquid.
