13 cloves garlic (roasted)
2 Tsp. Salt
1 Tsp. Pepper
1 Tsp. Thyme
1-2 Bay Leaf
1 Tsp. Fennel seed
8.5 cups water

Here is how you make Roasted Garlic Lover's White Bean Stoup!:

Soak dried beans overnight in 8 cups water. Drain and add to large pot. Cover with 8.5 cups fresh water. Add thyme, rosemary, fennel seed and bay leaf. Bring to boil, turn down to gentle simmer. Cook 1 hour. In the meantime, separate garlic into cloves (leaving skin on) and place in oven proof dish. Sprinkle with water, cover with foil and bake 350 degrees for 30 minutes. Remove from oven, let cool and peel. Set aside. Coarsely chop onion, carrots, potato and rutabega (or turnip). Add vegetables and roasted garlic to beans that have cooked for the hour. Add salt and pepper at this point. Simmer 1 hour. After you add all the vegetables, you may think that the soup is going to be way too thick, and that more water is definitely needed. IT IS NOT. It will be fine. Lots of liquid will cook out of the vegetables - plus what you want to end up with is a very thick soup. After simmering, remove the bayleaf. Once vegetables are tender add 1 cup chopped fresh parsley.Pur?e or leave chunky and enjoy!Serving Size:?Makes 12 1-cup servings
