1 large onion, chopped
1 large red bell peppers, chopped
3 garlic cloves, minced
2 tablespoons fresh ginger, minced
1 can small red beans, rinsed & drained
1.5 lbs yams, peeled and chopped into 1/2-inch cubes (about 4 cups)
1.5 cups vegetable broth or water
1 (14 ounce) can diced tomatoes
1-3 jalapeno peppers, minced (adjust this to your heat preference)
1/2 teaspoon salt
1-1/2 teaspoon ground cumin
1-1/2 teaspoon ground coriander
3/4 teaspoon ground cinnamon
3/4 teaspoon ground black pepper

Garnish:
1/4 cup creamy peanut butter
1/4 cup dry roasted peanuts
1 lime, cut into 6 wedges
sprigs of coriander

Here is how you make Tunisian Yam and Red Bean Stew:

Heat oil in skillet over medium heat. Add onion & peppers and cook, stirring occasionally, till soft (5 minutes or so). Make space in the center and add garlic and ginger. Cook till fragrant (about a minute). Stir well to combine.Place onion mixture in 5-qt. slow cooker. Add remaining stew ingredients (beans thru black pepper) and cook on low for 8 hours. Before serving, ladle about a cup of the juices into a bowl; mix in peanut butter and stir till well combined. Return peanut butter mixture to crock and stir till well combined.
