2 cloves garlic, quartered
1 slice whole grain peasant bread in 1/2" cube
4 cans cannellini beans, rinsed
6 cups water

1 yellow onion, chopped
3 carrots, coarsely chopped
6 cloves garlic, chopped
1/4 tsp pepper
1 Tbs Chopped Fresh Rosemary
1 1/2 cups low sodium chicken broth

Here is how you make Tuscan White Bean Stew:

To make the croutons, in a large frying pan, heat the olive oil over medium heat. Add the garlic and saute for 1 min. Remove from the heat and let stand for 10 min. to infuse the garlic flavor into the oil. Remove the garlic and discard. Return the pan to medium heat. Add the bread cubes and saute, stirring frequently, until lightly browned, 3-5 minutes. Transfer to a small bowl and set aside.Heat 2 Tbs olive oil over medium heat. Stir in the onion and carrots and saute' until the carrots are tender-crisp, 6-7 min. Stir in the garlic and cook until softened, about 1 min. Stir in the remaining 1/2 tsp salt, the pepper, the chopped rosemary, the bean mixture, and the stock. Bring to a boil, then reduce the heat to low and simmer until the stew is heated through, about 5 minutes.Remove part of the stew and mash.
