This is a hearty Vegan stew that combines a lot of leftover dried beans with some vegan sausage (couldn't find the exact brand, so I used Morningstar to calculate the nutritional info) and lots of spices.You can top with grilled corn, a drizzle of olive oil or diced tomatoes and yellow onions to change up the flavor. This is an easy Sunday night fix that gets you ready for a busy week. I store half in the fridge and freeze half for another week.

1 Chicken Style Bouillon Cube
2 Vegan Breakfast-style sausage links
3 cups of assorted dried beans (I used Kidney, Black, Lima, Great Northern, Navy, Appaloosa, Pink, Garbanzo, Split Peas, Yellow and Brown Lentils but the key here is to go for a variety of beans)
1/4 cup Pearled Barley
8 cups (+/-) Water (If you soak the beans before cooking, you will need less)
1 tsp Tabasco
2 Tbsp Cumin
2 Tbps Paprika
1 Tbsp Chili Powder
1 tsp Garlic Powder (Not Garlic Salt)
1 tsp Black Pepper
1/2 tsp Nutmeg
1/4 tsp Rubbed Sage


How Do I Make Vegan 87 Bean Stew?

Here is how you make Vegan 87 Bean Stew:

- Bring 2 cups of water to a boil and break up "chicken style" bouillon into boiling water. - Allow to dissolve. - Add half of the cumin, all of the Garlic Powder, all of the Black Pepper and 1/4 the Paprika.- Stir to incorporate seasonings- Add Beans and measure another 2 cups of water.- Bring Beans to a boil, adding water to keep covered as necessary. Leave the lid slightly askew, allowing some steam to escape.- When Beans are at a boil and beginning to soften, add Rubbed Sage and 1/2 of Chili Powder. Add another 2 cups of water. Replace Lid.- Allow Beans to Boil on Medium Heat for approximately 20 minutes, ensuring water level covers beans. - Add remaining Chili Powder and Cumin, stirring to incorporate. Add Barley and replace lid. - Turn Stew down to Simmer over Low heat.- Allow Stew to Simmer for approximately 40 minutes, adding the final 2 cups of water as the beans cook. Halfway through simmering, microwave Vegan sausage and slice on a bias, add to stew. - Add remaining spices, stir to incorporate. The stew is complete when beans are fork tender.
