In a medium-sized, non-stick saucepan, heat oil. Saute onion and garlic for 2 min. Reduce heat and blend in remaining ingredients, whisking in the cornstarch last. Place roast in crock pot, pouring sauce over top. Cook on low 8-10 hours.
