1-1.5lbs of Beef Stew Meat
2 cups chopped onion
2 tbsp flour
salt and pepper
3 cloves garlic, chopped
2 medium carrot sliced
1 medium-large zucchini, diced
I can Fire Roasted Tomatoes with green chile
Olive oil
2-3 Cups Beef Stock
1.5-2 tbsp Paprika
1 tbsp chili powder

Here is how you make Courtney's Vegetable Beef Stew:

Heat olive oil in large pot over medium heat. Coat beef with the flour, salt and pepper. Add beef to pan and brown on all sides. Remove beef to another dish and add diced onion, cook until translucent. Add garlic, cook a few more minutes. Add spices. Add back beef and sliced carrot rounds. Add stock and stir, scraping up browned beef bits from bottom of the pan. Add canned tomatoes and zucchini.Cook covered over medium heat for 30-45 minutes until beef is tender.Serving Size:?6
