In a bowl whisk together flour, sugar, crumbled dried sage, baking powder, baking soda and salt. Using pastry blender or 2 knives, cut in cold cubed butter until mixture resembles coarse crumbs. In a small bowl, whisk buttermilk with 1 of the eggs; stir into flour mixture with fork to make soft dough. With floured hands, press dough into a ball. Pat into 10x7 inch rectangle; cut into 12 squares. Place on parchment paper-lined or flour -dusted baking sheet. Beat remaining egg; brush over biscuits.
