Preheat oven at 350 degrees.In a pan, sautee onion, garlic and mushroom in non-fat cooking spray. Cook until onions are clear.In a bowl, combine remaining ingredients. Add cooked onion, garlic and mushrooms. In four seperate mini-souffle dishes, mound the buffalo mixture into loaves in each dish.Cook in the oven for 30-40 minutes or until the meat reaches 140 degrees on a meat thermometer.
