4 - 8” Whole Wheat Tortillas
4 Boneless, skinless chicken tenderloins (or 2 boneless, skinless breasts)
1 Green bell pepper
1 Small red onion
1 PKG of Uncle Bens Ready Whole Grain Medley Santa Fe
(Seasoned whole grain rice cooked with tomatoes, black beans, corn, and poblano peppers & cilantro)
½ C Sargento reduced fat Mexican cheese blend
4 T Fat free sour cream
4 T Taco sauce or salsa
1 ½ - 2 T Olive oil
½ C Lime Juice
1 Tsp Cumin (optional)


How Do I Make The "Better" Burrito?

Here is how you make The "Better" Burrito:

Place thawed chicken in zip-lock bag or plastic container & toss with lime juice & cumin. Marinate in refrigerator for a ½ hour to an hour. Slice green pepper & onion. Put olive oil in pan over medium heat, toss in peppers & onions, and cook for about 5-8 minutes or until desired tenderness. While cooking the peppers & onions, put chicken on grill ( I use my Foreman) and cook for about 5 - 7 minutes, or you can place about a tablespoon of olive oil in a pan and cook the chicken for about 5 minutes on each side or until no longer pink in the center. (This process adds 35 calories & 3.5 grams of fat to each serving). Prepare the rice as shown on the package (microwaves in 90 seconds). Warm tortillas in the microwave for about 10 seconds. For each tortilla use ¼ C rice, 1 tenderloin or half of a breast (cut into pieces), ¼ of the pepper & onion mixture, 1 T taco sauce or salsa, 1/8 C cheese, & 1 T of the sour cream.Enjoy!
