This is a slight variation of a classic polish fried cabbage dish. A friend of mine used to use salt pork as the fat and meat in this dish; I since changed that to just a pound of bacon and some butter. But I decided to try and make it a tiny bit healthier, while not losing the flavor and adding a Portuguese flair to it.

Here is how you make Cabbage and Chourico:

Cut up chourico into bite sized pieces and cook on medium heat in stockpot until fat has been rendered out, stirring occasionally.While chourico is cooking, shave cabbage. Once chourico is done, add coconut oil and cabbage and stir. Cover and let cook, stirring occasionally, until cabbage is wilted to desired consistency. I prefer mine very cooked.
