Add the bacon and onions. Cook until the bacon starts to crisp and brown slightly on the edges. Add the ham, cook it until it just browns a little. Make sure to stir the mixture around the pot in order to coat the bottom of the pot with the oils from the browned meats. There shouldn't be too much if you use really lean 5% ham. Add the cabbage, apples, garlic, and seasonings. Cook about 5 minutes, then add the port wine. Reduce the heat to low, and put the lid on. Simmer it for about an hour. If you very thinly sliced the cabbage the cooking time may shorten about 10 minutes.
