This is my version of an "Allreceipes.com" carrot cake receipe. I used only 2 1/2 c of grated carrots and added 1 cup of raisens. Also subsituted a low fat cream cheese for the topping. It makes a very moist and tasty cake. Not a good cake for a diet.

4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 tsp vanilla extract
2 cups all-purpose flour
2 tsp baking soda
2 tsp baking powder
1/2 tesp salt
2 tsp ground cinnamon
2 1/2 cups grated carrots
1 cup raisins (not packed)
1 cup chopped pecans or walnuts

1/2 cup butter, softened
8 oz cream cheese, low fat, softened
4 cups confectioner's sugar
1 tsp vanilla extract
1 cup pecans or walnuts chopped




How Do I Make Carrot Cake?

Here is how you make Carrot Cake:

1. Preheat oven to 350 degrees. Grease and flour a 9x13 inch pan.2. In a large bowl, beat together eggs, oil, white sugar and 2 tesp vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots and raisins. Fold in pecans or walnuts.3. Bake in the preheated oven for 40-50 minutes, or until a toothpick inserted into the center of the cake comes out clen. Let cool in pan for 10 minutes. Then turn out onto a wire rack and cool completely. Can also be cooled and iced in the pan.4. To make frosting, in a medium bowl, combine butter, cream cheese, confectioners' sugar, and 1 teaspon vanilla. Beat until mixture is smooth and creamy. Stir in chopped nuts.
