When it begins to boil, add salt and then the pasta. Cook according to package, but start checking a couple of minutes before it is finished to make sure it does not overcook.In the mean time, snip the bacon strips into a skillet large enough for the entire recipe and cook until crispy. Add white wine and let bubble for a minute or two and then take off the heat. Mix together the egg, half and half, cheest and pepper.Reserve about 1/2 cup of the pasta water and then drain. Toss the pasta in the skillet with the bacon and white wine and return to the heat for about one minute. Remove from heat and then add egg mixture. Toss all ingredients together quickly to prevent the egg from scrabling. Add some of the reserve pasta water if the sauce is too thick.
