2 medium onions, peeled and thinly sliced
1 pound carrots, scraped and sliced
1 teaspoon salt
1 teaspoon black pepper, ground
1 tsp ground cinnamon
1/2 tsp ground cardamom
1/4 tsp ground nutmeg
1 tablespoon fresh grated root or 1/2 teaspoon powdered ginger
1/4 tsp ground saffron, dissolved in 1 tbsp hot water
2 cups freshly squeezed orange juice
1/2 cup lime juice

Here is how you make Carrot Khoresh:

1. Heat 3 tbsp oil in a non-stick saute pan and saute chicken and onion over medium heat, stirring occasionally with a wooden spoon, for 20 minutes. Add carrots, salt, pepper, cinnamon, cardamom, nutmeg, ginger, and saffron water and saute for a few minutes longer.2. Add orange juice and lime juice. Bring to a boil, reduce heat, cover and simmer 1.5 hours over low heat, stirring occasionally.3. Check to see if chicken and carrot are tender. Taste the stew and adjust seasoning.
