Slice/cut chicken breast into bite-sized chunks, brown in olive oil.Heat spinach and assorted spices in a small saucepan, very little water. When most of the water has boiled out, add swiss cheese and stir until melted.Add cooked chicken and spinach/cheese mixture to the zucchini and onions. Stir well and continue baking until zucchini has softened to taste.A little parmesan cheese can be sprinkled on top for extra indulgence.Makes 2 entree servings. Works well without chicken as either veggie entree or side dish. Highly versatile with different herbs and spices.
