Here is how you make Leftovers Casserole:

1. Dice all the veggies up and cook in a pot with about .5 c water (add more as needed) till semi-soft then add velveeta cheese and sour cream and let simmer to allow some fluid to evaporate.2. Add pre-cooked chicken diced up to pot.3. Spread mashed potatoes on bottom of 11x 13 pyrex casserole dish. 4. Use ladel with holes in it to scoop our veggie mixture on top of potatoes. Make sure some 'juice' is left over in pot and make sure it's off the heat.5. Cut up loaf of Macaroni Grill peasant bread (or foccacia bread will do) and spread on top of veggies.6. Pour remaining 'juice' on top of bread evenly around the pan.7. Cover with aluminum foil and bake for 30-40 minutes at 350*F. Makes about 8 1.5c servings.
