1.Preheat oven to 400 degrees F. Lightly coat a 9-by-13 inch baking pan with cooking spray.2. Heat oil in a large skillet over medium heat. Add onion and cook until starting to brown. Add ground turkey and cook until cooked all the way through. Stir in beans, corn, tomatoes, cumin, salt, and cook, stirring occasionally, until veggies are heated through. 2. Scatter half the tortilla pieces in the pan. Top with half the meat and veggie mixture, half the enchilada sauce, and half the cheese. Repeat the layer. Cover with foil.3.
