Jimmy Dean (or any other good quality pan sausage) browned and drained1 eggplant peeled and cubed 2-3 yellow squash sliced into 1/4" portions 2-3 Zuchinni sliced into 1/4" portions 1 cup seasoned bread crumbs ( I use Italian seasoned ) 2 cups (or whatever amount you like) grated cheddar cheese 4 tbsp. butter (salted or unsalted, I've used unsalted for this recipe) How Do I Make Sausage and veggie casserole?Here is how you make Sausage and veggie casserole: While you are browning the sausage, take the zuchinni, squash and eggplant and par-boil or steam them just until tender.Drain the fat from the sausage and put in large mixing bowl.Add veggies and bread crumbs and mix well. Place into 9x13 baking dish and sprinkle top with bread crumbs. Cut up the butter pats into smaller pieces and place on top of the bread crumbs. Bake at 350 for 30-40 minutes. Add the cheese to the top in the last 10 minutes. You want the cheese to be bubbly but not browned or crisp.This recipe should make 6 - 8 servings dependent upon serving size. For nutritional values I have used 8 1cup servings.
