2 Tbsp sugar
2 Tbsp water
1/4 cup fish sauce
1/4 cup water
1 onion, chopped
2 cloves garlic
1 sweet red pepper, sliced
1/8 - 1/4 tsp red pepper flakes
1/4 tsp black pepper
1 lb. boneless chicken, cut into 1" strips
Fresh cilantro (don't leave this out!)

Here is how you make Caramel Braised Vietmese Chicken:

Combine sugar and water in 10" skillet and heat over medium heat, swirling pan to dissolve sugar. Don't use a spoon or whisk; it will not turn out well. Simmer for 5-8 minutes until the mixture turns a golden amber. Combine fish sauce and water; remove pan from heat and slowly add the fish sauce/water combo. Swirl pan to mix. Add onions, garlic and seasoning. Cook onions for 2 minutes. Add chicken and red peppers, cover and cook over medium heat for 20 minutes, stirring occasionally, until chicken is cooked through.
