What Are The Ingredients For Maria's White Bean Chicken Chili Recipe?The ingredients for Maria's White Bean Chicken Chili are: 1 Lb dried navy beans2 Tbl olive oil 2 Cups White Onion, chopped 2 Pablano peppers, roasted, peeled, and chopped 2 Tbl garlic, minced 2 1/2 Lbs ground chicken 2 Tbl Chili powder 1/2 tsp ground cumin 1/4 tsp dried oregano 1 bay leaf 3 Tbl cornmeal 2Cups low soduim chicken broth 2 (10-ounce) cans Ro'tel diced tomatoes and green chiles (1-mild, 1-original), undrained 6 medium tomatillos, skins removed 1 lime, juiced 2 Tbl cilantro, chopped 2 Tbl Emeril's Southwest Essence Monterey Jack Cheese, for serving Green onions, for serving Sour Cream, for serving Lime flavored Tostidos, for serving How Do I Make Maria's White Bean Chicken Chili?Here is how you make Maria's White Bean Chicken Chili: In a large pot, soak beans in cold water to cover by 2 inches for 4 hours or overnight. Drain beans in a colander and return to pot with enough water to cover by 2 inches. Cook beans at bare simmer until just tender, about 1 hour, and drain in colander.Roast the poblano peppers on a grill or under a broiloer turning often, until blackened and soft. Place them in a bowl covered with plastic wrap to cool. Wehn cool; peel and seed. Wash and stem the tomatillos then run them through a food processor with the pablano peppers until they are pulverized, but still have some texture (you can dice them by hand, but this will leave tomatillo skins floating in your finished product.)In a large skillet, heat the oil and saute the onion until soft and beinning to caramelize. Add the garlic and cook, sitrring, for 2 minutes. Add the ground chicken, Emeril's Essence, chili powder, cumin, and oregano and cook, stirring occasionally, until chicken is browned and cooked through. Add the cornmeal and cook, stirring for 2 minutes. Add the chicken broth, Ro'tel tomatoes, lime juice, bay leaf, tomatillos and peppers and stir to combine. Bring to a boil, reduce heat to a simmer, and cook, uncovered, for 30 minutes, stirring occasionally. Add the cooked beans and continue to simmer for an additional 15 minutes. Salt and pepper as needed and adjust seasonings as needed. Add the cilantro and cook, stirring occasionally, for another 15 minutes.
