Here is how you make Vickie?s Chicken Chili:

Brown onions and tomatillos in 1.5 tblsp of olive oil, add garlic and remove from pan. Add 1 tbsp of olive oil to pan, add chicken (chopped in bite sized pieces) and brown. Return onions, tomatillos and garlic to pan. Pour in 2 cups of chicken broth, add green chilis and chayote, add salt and pepper to taste. bring to a boil then reduce heat to simmer for 30 minutes. Add beans to chili and simmer for 20 minutes until flavors meld.
