Place the chicken thighs (make sure they are patted dry) onto the onion and cook until browned on one side (about 5 to 7 minutes). Sprinkle the exposed side of the chicken with the turmeric and then flip the chicken and brown the other side (about 5 to 7 minutes). Stir in the dry couscous--it should have a really pretty yellow color from the turmeric. Once the couscous is stirred in, add the vegetable broth and water. Bring everything to a simmer and simmer for 10 minutes. Stir in the coriander seed and cumin seed and simmer for another ten minutes.
