Toss the pieces to coat them with the spices. Let them stand at room temperature for at least 30 minutes.To prepare the couscous, combine it with the raisins in a bowl and pour in 2/3 cup of boiling water. Cover the bowl and let stand for at least 5 minutes.Heat the oil in a large, heavy-bottomed skillet over medium heat, tilting the pan to coat it evenly. Add the onion and garlic and saute them, stirring constantly, until the onion is translucent, about 3 minutes. Sprinkle the salt over the chicken and add the pieces to the skillet. Saute, stirring frequently, until the chicken feels firm but springy to the touch, about 5 minutes. Pour the stock over the chicken and bring the liquid to a boil.
