1 pound boneless skinless chicken breast, diced into bite-size pieces
3 T olive oil
2 tsp paprika
1 tsp ground cumin
3/4 tsp ground cinnamon
1/2 tsp ground coriander
1/4 tsp cayenne pepper
1/2 tsp black pepper
1 tsp salt
1 medium yellow onion, chopped
1 tsp fresh ginger grated
2 cloves garlic, minced
1 red bell pepper, chopped
3 carrots, chopped
1 can (6oz) tomato paste
2 cups chicken broth
2 cups chickpeas/garbanzo beans
2 cups cooked whole wheat pearl couscous


How Do I Make Moroccan Chicken with Couscous?

Here is how you make Moroccan Chicken with Couscous:

Mix paprika, cumin, cinnamon, coriander, cayenne, black pepper, and salt in a small bowl. Heat half the olive oil in a saute pan. Add the chicken and half the seasoning you just mixed. Cook until chicken is browned on all sides and fully cooked through. Remove chicken from pan. Put the rest of the olive oil in the pan and let heat up. Saute the vegetables (onion, red pepper, carrots), garlic, and ginger for about 4-6 minutes, or until translucent/soft. Add the rest of the seasonings and saute another 30 seconds. Add in chicken broth, chickepas, tomato paste, and chicken. Bring to boil then reduce heat to a simmer. Simmer for 8-10 minutes or until thickened. Cook the pearl couscous according to package directions and then add to the chicken mixture once both are done cooking.
