2 lbs Boneless, skinless chicken breasts
1 Large Onion Halved length wise and sliced
3 Carrots, washed peeled and sliced into rings
1 Medium Celery stalk
1 100g can of Mushrooms
6 Oz Frozen Peas
1 Cup or more of water
Parsley 2 sprigs
Thyme 1 tspn
2 Bay Leaves
2 whole Cloves
5 whole Peppercorns
3 Tbspn unsalted butter
3 heaped tablespoons of Eagle Mills All-Purpose Unbleached Ultragrain Flour
1 large Egg Yolk
45 ml Cream
Juice of half a lemon


How Do I Make Chicken Fricasee?

Here is how you make Chicken Fricasee:

Slice chicken breast into strips.Wash, Peel and prepare all vegetables.Place Chicken pieces in a pot and cover with water bring to a boil and then simmer till tender and cooked. After about 10 minutes add all the vegetables except peas.Make a bouquet garni by tying parsley, bay leaves, cloves and peppercorns into a piece of muslin and placing in the water with chicken and vegetables. Add the thyme. Simmer till vegetables are cooked. Pour all the contents of the pot into a colander reserving the liquid in a bowl/pot. Make a roux by melting butter, add seasoning salt and pepper and Mrs Dash table blend. Add flour to form a paste and cook gently for about 30 seconds.Remove from heat and work about 600 ml of strained liquid into the flour a little at a time to avoid lumps. Once all the liquid has been added, return the pot to the heat and stir until sauce thickens. Add the meat and vegetables as well as the peas to the sauce bring to a boil and reduce heat, simmer for about 10 minutes. Blend egg yolk and cream and whisk together.Pour into the sauce and heat through but do not boil. Just before serving add the juice of half a lemon and stir to blend.Pour into a serving dish and garnish with rolled, grilled Bacon slices and parsley if desired.
