What Are The Ingredients For Lightened-up chicken piccata Recipe?The ingredients for Lightened-up chicken piccata are: Butter-flavor cooking spray4 small to medium chicken breasts, boneless and skinless 1 tbsp extra virgin olive oil 1 tbsp Garlic, minced 1/2 cup lemon juice 1/2 cup sherry or white wine 2 tbsp capers salt, pepper, oregano to taste How Do I Make Lightened-up chicken piccata?Here is how you make Lightened-up chicken piccata: If you have four small chicken breasts, you should tenderize them with a meat mallet (pound them gently for about 15 seconds each). I started out with 2 very large chicken breasts, butterflied them, then pounded them into cutlets. You want them to be pretty thin, at most 1/2 inch thick. Next, season the cutlets liberally with salt, pepper, and oregano.Heat a grill pan on medium-high heat. Spray with butter-flavored cooking spray. Grill chicken pieces approximately 4 minutes a side until no longer pink on the outside and almost fully cooked. (They may not be completely cooked inside yet, that is okay.)While the chicken is grilling, heat (on medium heat) olive oil in a medium saut? pan (one that has a lid). When the oil is hot, saut? the garlic for approximately 30 seconds. Add in the sherry and lemon juice. Bring to a simmer and let this cook for about two minutes. Then reduce the heat to as low as possible while still maintaining a simmer. Put the chicken pieces into the pan and cover. Simmer for 10 minutes or until the chicken is completely cooked, turning once so that the other side of the chicken breast bathes in the sauce. If you want the sauce to be thicker, remove chicken pieces to a plate and whisk in cornstarch 1/2 a teaspoon at a time to your desired thickness. Spoon sauce and capers onto each piece of chicken.
