Rotisserie chicken and fresh veggies lend to a relatively quick pot pie. Although cream of mushroom would have been an ideal sauce maker, I didn't have any. I used Alfredo Sauce I had in the pantry. What Are The Ingredients For Chicken Alfredo Pot Pie Recipe?The ingredients for Chicken Alfredo Pot Pie are: 4 oz Costco Rotisserie Chicken (dark meat)2 oz Chicken breast (Costco Rotisserie) 1 C Peas, frozen 5 stalks, Celery, raw, medium (7-1/2" - 8" long) 5 Garlic cloves 5 large Mushrooms, fresh 3 pillsbury pie crusts (ready made, rolled) .5 C Ragu Classic Alfredo Sauce Pepper, black - to taste Italian seasoning - to taste How Do I Make Chicken Alfredo Pot Pie?Here is how you make Chicken Alfredo Pot Pie: Preheat oven to 450 degrees. Mince garlic; chop celery and mushrooms; and dice chicken. Saute garlic in a wee bit of hot oil or PAM. Add diced chicken, veggies, black pepper and some Italian seasoning (or to taste) Saute for about a minute or two. Add Alfredo sauce and simmer for an additional couple minutes.Prepare dish by spraying the bottom of dish with PAM. I used a 9 x 13 glass dish. Place two pie sheets on dish, making sure bottom is covered, laying extra over casserole sides. Pour and spread filling over entire crust. This will probably be a thin layer. Add third crust, trimming sides off. Overap with first two crusts, pinching if desired. Use leftover crusts to cover any openings. Bake for about 20 minutes or until crust is browned and crispy.For a smaller family, use only two crusts (one for bottom and one for top) and place in pie plate. Add filling to bottom layer. Add top crust. Place vent holes on top of crust to allow steam to escape for a crispier crust. For a lower calorie version, create a bottomless pot pie and add more veggies to the mix.
