Saw Curtis Stone make this on the Today show, and wrote down what he did. I did add the potatoes and peas, which he didn't, but I think they add a lot of flavor. You will have to trust me when I tell you that the celery root really is amazing as the sauce. He used white wine instead of the chicken broth, but I didn't have any wine handy. I used chicken broth in the nutritional calculations. I was delighted at how it turned out. After I made it, I froze it in individual bowls, and will thaw and then put it into the toaster oven to bake for a wee bit. Cool them and cut into bite size pieces.1 onion, peeled and diced a few sprigs of thyme (likely about 1 tsp dried) 2 bay leaves 2 cloves garlic, peeled and chopped 1 cup white wine (I used chicken broth) 8 ounce container of sliced mushrooms 1 tablespoon chopped tarragon 2 sweet potatoes, peeled and roughly chopped 2 cups roughly chopped carrots 2 cups roughly chopped turnip 1 celery root, peeled and diced 1 cup milk (I used 1%) 1 tsp salt 1/2 tsp pepper How Do I Make Chicken Pot Pie with No Crust?Here is how you make Chicken Pot Pie with No Crust: Makes 7 servings, about 1 cup of the chicken pot pie, and 1/2 cup of the topping. 1. Place celery root and milk in a saucepan, and simmer till the celery root is soft. Remove from the heat strain it. Keep the milk.. Add the celery root to a blender and add as much of the reserved milk as you need to make a nice puree. 2. Place the rest of the root vegetables in a large baking pan, season with half of the salt and pepper, and roast until the vegetables are tender. It will take about 25 to 30 minutes.3. Remove the vegetables from the pan, keeping the potatoes on the side. Mash all the rest of the vegetables. 6. Using a large, cast-iron casserole, heat the oil. Add the onions and mushrooms. Saute them until the onions are translucent and the mushrooms cooked. Add the garlic. Deglaze the pan with the wine or chicken broth. Cook for 5 minutes or so. 7. Add the chicken. Cook for another 5 minutes or so, and add the celery root puree, tarragon and the rest of the salt and pepper. Add the frozen peas and the roast potatoes. 8. Transfer to individual oven proof dishes or one big casserole dish. Bake n the oven until hot throughout.NOTE: I divided it into individual freezer containers and didn't bake it. I just warm it up in the microwave before eating it.
