Here is how you make Ginger Peach Roasted Chicken:

Preheat oven to 350.Rinse chicken and pat dry. Set aside.Dice peaches and set aside.In a bowl, mix 2 tbsp freshly grated ginger root, 3 tbsp raw honey (softened), 1 tbsp rice vinegar, 1/2 tbsp soy sauce, 2 tsp crushed red pepper, and 1/4 tsp sea salt.Take 1/4 cup of the basting mixture and mix with 1/3 of the diced peaches; place in the cavity of the bird.Now, cut small slits throughout the skin of the chicken so that the basting mixture can penetrate.With a basting brush, lightly cover the entire outside of the chicken with the basting mixture You will add the peaches later during the cook time.You will want to check the chicken every 20 minutes or so and add more of the basting mixture and to make sure it doesn't burn. Honey has a tendency to burn, so add only a little of the mixture at a time and continue to check frequently.At about an hour into cooking, add the peaches on top of the chicken and some around it.The chicken will be done when the internal temperature reaches 180 degrees and the juices run clear.Even if it burns a little, don't worry.
