454 gr (1 lb) chicken livers cut into 1/2-3/4 in pieces (remove white sinues). Could be done a day early.
1 med onion, sliced thinly
6-7 mushrooms, sliced thinly
1 tsp parsley dried (1 tbsp fresh)
1 tsp chervil dried (1 tbsp fresh)
1 tsp thyme dried (2 tsp fresh)
1/2 tsp Garam Masala (if not allergic to clove)
salt and pepper to taste
500 ml (1 cup) plain yogurt - skim or fat free

Here is how you make Chicken Livers with yogurt sauce:

Melt 1 tsp butter or margarine in 1 tbsp grapeseed oil.Saute onions slices till soft and golden color (about 5 min. on med heat), stirring occasionally. Add mushrooms and cook for 3 minutes stirring occasionally. (This can be done a few days ahead).Keep warm aside on a plate, while you cook the liver pieces (must get rid of most white connective tissues). You might have to add (if needed) more grapeseed oil (1 tsp) to saute the liver pieces. If pieces are no bigger than 3/4 in., cooking time on Med-high heat, is about 4-5 minutes, stirring all the time to cook all sides until there is no more sign of blood, but you can still see some redness on the liver pieces- DO NOT OVERCOOK - Add herbs and garam masala, salt and pepper. You may want to add 1/4 cup of liquid (plain water is fine). Add your onion and mushrooms, stir together with liver pieces - stir some more and cook for another 3-4 minutes. TURN OFF THE HEAT. Then add the yogurt and stirr to heat through and coat liver pieces.
