What Are The Ingredients For Eileen's Chicken in Wine Sauce Recipe?The ingredients for Eileen's Chicken in Wine Sauce are: -one medium onion chopped into very small squares-three egg whites beaten -about one cup white cooking wine -Either 4 tablespoons of extra virgen olive oil or you can use extra virgen olive oil spray -3 skinless chicken breasts -1 cup bread crumbs plain (or how whatever it takes to coat chicken breasts) -1 cup small portabello or white mushrooms -1/2 cup skim milk mozzarella cheese -salt to taste or I sometimes season chicken with spanish ADOBO How Do I Make Eileen's Chicken in Wine Sauce?Here is how you make Eileen's Chicken in Wine Sauce: Serving size of each chicken breasts is about the size of your hand (@6-7inches long and @5 inches wide). Wash and season chicken breasts to taste (either with Adobo or salt). Set up a bowl with beaten egg whites, a wide plate of bread crumbs, and then an empty plate to place the chicken once it is breaded. Dip first breast into bowl of beaten egg whites so the breast is completely soaked. Remove breast from egg bowl and place on the plate of bread crumbs; turn and coat the other side. Repeat for all 3 chicken breast pieces and set aside. Begin to heat about 4 tablespoons of extra virgen olive oil in a wide saute pan. Once oil is hot; begin to brown breaded chicken breasts in pan. Once chicken breasts are fully cooked on both sides and browned - remove and set aside. Begin to cook chopped up onion in the same pan(you may need to add another tablespoon of olive oil if it is used up from saute-ing the chicken breasts). Using the same pan gives flavor therefore don't worry about all the fried left over stuff from the chicken. Use a spatula to scrape it off while fully cooking onions. Once onions are translucent, add mushrooms. Place chicken back into the pan (I sometimes place the onions/mushrooms on top of chicken so they do not stick to bottom). Once chicken is back into the pan wiht the onions/mushrooms - add a cup of white cooking wine. Bring everything to a boil. Once everything is boiling; sprinkle Mozz cheese on top and cover tightly. Cook another 5 minutes. Mozz cheese will melt liquidy, but that is OK. Serve with veggies or rice pilaf.
