Pour vegetable stock, bay leaves, apple cider vinegar, pepper, and thyme into dutch oven and simmer until chicken is cooked through. 2. Remove chicken and add butter. Once butter is completely melted add enough flour to create an opac slightly thickened sauce. Wisk the flour in until the flour is well blended. Don't make a paste, but make a reduced thick sauce. 3. Add chicken back in. Add potatoes, carrots, onions, and garlic, and celery tops or lovage. 4. Add enough chicken stock to cover it all and let it come up to a simmer, covered. 5. Cook until potatoes and carrots are tender. 6. Preheat oven to 3500 F.
