Heat the oven to 375? F.Finely dice the pears, onion, and celery. Add 2 teaspoons of the olive oil to a saucepan over medium heat. Sweat the pears, onion, and celery with a pinch of salt, 1 tablespoon of the parsley, and the thyme. You can also include some leaves of the celery if they are in good condition.Butterfly the chicken breasts: Slice them longitudinally and use a meat tenderizer to flatten them. Brush one side of each chicken breast with olive oil, and turn over, olive oil side down.When the pear mixture is softened, remove half of it from the pan to use for stuffing. To the remainder, add the apple cider and chicken stock and continue cooking over medium-low heat, to reduce and create a sauce.Using the removed half of the pear mixture, divide it among the chicken breasts.
