* Mix honey and lime juice together in a bowl.* Add finely chopped ginger and cubed chicken, making sure the liquid covers the meat. Add water if needed; mix well. * Marinate in refrigerator for at least one hour. 4-6 hours is best.* Heat olive oil in stir fry pan.* Pour marinade into pan and bring to a boil.
