Chicken and Stock;
4-6 small boneless / skinless Chicken Breasts
1 medium onion chopped
5-6 large celery stalks chopped
3-4 garlic cloves crushed
Water to cover chicken and veggies in large pot

Dumplings
2 C Gold Medal Whole Wheat flour
3 large eggs (beaten in seperate bowl)
salt & pepper to taste
broth from boiled chicken if needed


How Do I Make Chicken and Dumplings (made w/ whole wheat flour)?

Here is how you make Chicken and Dumplings (made w/ whole wheat flour):

Place chicken and chopped veggies in large stock pot and cover with water. Bring to boil and then add boullion cubes. Bring to boil, lower heat to med-high and cook for an hour. I allow the broth to cool over night and then I skim any fat from top of broth ( some times I use chix w/ the skin for a richer broth and then de-fat it). The next day I reheat broth and chix while I prepare the dough.Dumplings; in a large bowl I mix the flour w/ salt and pepper and then a little at a time I add the beaten eggs until all egg is incorporated and dough is still. Roll dough out on to a floured surface and roll dough out to about a 1/4 inch thickness. Cut dough into strips of about 1x2 inches in size and drop into slowly boiling broth and cook for approx. 45 min to an hour. Sometimes I will add carrots to the broth before the dumplings for some extra vitamins and fiber.Makes approx. 6 - 1 1/2 to 2 cup servingsNumber of Servings: 6Recipe submitted by SparkPeople user LMJ2874.
