Thoroughly clean chicken and cut into pieces. Boil until cooked and softened. Take cooked chicken pieces out of pot and allow to cool on platter. Debone. Save the broth.In a very large pot, add pearl barley and the broth from boiled chicken and enough water to cover the barley by 3 inches.Add the chicken and mix well into the boiling barley.Mix frequently until the barley absorbs most of the water. Add salt to taste. Cover and cook over a very low fire for 2-3 hours. Place a thick metal sheet under the pot to keep from burning...or as an alternative place pot into oven and bake at 350F. Check frequently for water and add boiling water as needed to keep harees moist. When the harees/pearl barley has attained a "mushy" look and consistency, beat with a mixer to the consistency of cooked oatmeal. Making sure that the deboned chicken pieces are well integrated into the harees.
