This isn't authentic, but it's a really tasty casserole. I use tortilla chips for ease. ETA: Changed # of servings from 4 to 6. You could probably get even more with a salad and a side dish.

2 c. chopped onion
2 bell peppers, chopped
8 corn tortillas, baked and broken into pieces, or a med. bag of tortilla chips (my preference)
4 c. refried beans
1/3 cup chopped Spanish olives (opt)
2 cups hot sauce (I use chunky salsa)
1 c. grated sharp cheddar

Here is how you make Chilaquiles:

Saute onions and peppers until translucent. Grease 9x13 pan, line pan with tortillas.Add refried beans in a layer on top of tortillas.Add sauted vegetables.Add olives, if using (please do!)Add salsa, and top with cheese.Bake covered at 375F for 25-35 min, uncover and bake another 10 min, or until cheese is blubbly.Serves 4-6.Number of Servings: 6Recipe submitted by SparkPeople user ZENMOMMA.
