Saute onions in canola oil until translucent. Add garlic and roasted red pepper to pot and cook additional 1-2 minutes.2. Add tomatoes, tomato sauce, chili beans, garbanzo beans, potatoes, carrots and spices to pot and bring to boil. Once chili comes to a boil, reduce to a simmer and let cook until potatoes and carrots become al dente. (Simmering tomatoes, sauces and spices alone for 15+ minutes first will help to meld flavors.)3. Mix in green pepper and continue to let simmer until all veggies are tender.4.
