- Zucchini, 1 cup, sliced
- Yellow Sweet Corn, Frozen, 1 cup kernels

Here is how you make Janet's Vegetarian Chili Mild:

Chop all vegetables ahead of time. In large pot, melt the coconut oil on medium heat. Add chopped onions to pot and saute until translucent (don't brown). Add crushed garlic to pot and saute with onion. Don't let garlic burn. Then add carrots, mushrooms, zucchini and Quorn grounds and continue to saute. After about 5 minutes, add the beans, tomatoes, broth, and seasoning packets. bring to a boil. When it comes to a boil, add the frozen corn. Let boil for about 10 minutes, stiring the pot to ensure nothing burns on the bottom. Then turn heat down and simmer until it thickens.
