2 cups Vegetable Broth

Here is how you make Mel's Vegetarian Chili:

Add oil to skillet. When heated, add onion and bell pepper, cook for a few minutes until they start to turn translucent. Add garlic, cook for 2 minutes. Add tomatoes (undrained), spices, broth, and all beans. Cook til hot, then simmer as long as you want. Add more liquid (water/broth/beer) if needed. I use an immersion blender after about 10 minutes of cooking to puree just a bit of the beans/tomatoes, etc. This makes the chili thicken without cornstarch.
