Here is how you make Rachel's Vegetarian Chili:

Sautee onions and garlic in oil until translucent, about 2 minutes. Add carrots and corn. Sautee another 2 minutes, then add beans, cilantro, parlsley, and spices. Stir together and heat thru, about 1-2 minutes. Add can of Rotel and salsa, reduce heat to med-low, cover, and simmer until carrots are cooked to your desire (I did mine about 10 minutes).Makes 5, one-cup servings.~I did add a couple ounces of beer after adding the carrots and corn, then let it evaporate before adding the rest; just adds a little flavor~Number of Servings: 5Recipe submitted by SparkPeople user REOWINGS.
